Ingredients

  • 2 pounds Chicken wings
  • 1/4 cup Extra-virgin olive oil
  • 4 Garlic cloves
  • 2 tablespoons Fresh rosemary
  • 1/3 cup Parmesan cheese, grated
  • 1 teaspoon Dried Italian herb blend (oregano, basil, thyme)
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1

Preheat the smoker to 225°F (107°C). Pat the chicken wings dry and season them with salt and black pepper.

  2. 2

In a small bowl, combine olive oil, minced garlic, chopped rosemary, and the Italian herb blend. Brush the mixture evenly over the wings.

  3. 3

Place the wings on the smoker rack and smoke for 60 minutes, maintaining the temperature.

  4. 4

After 60 minutes, increase the smoker temperature to 350°F (177°C) and continue cooking for 15 minutes, or until the internal temperature reaches 165°F (74°C).

  5. 5

During the last 5 minutes, sprinkle grated Parmesan over the wings and close the lid to let it melt.

  6. 6

Remove the wings, let them rest for 2 minutes, then serve hot.
