Ingredients

  • 8 large Eggs
  • 6 oz Spinach
  • 1 tbsp Ginger
  • 2 cloves Garlic
  • 0.5 tsp Turmeric
  • 1 tsp Ground cumin
  • 0.5 tsp Garam masala
  • 1 small Green chili (optional)(optional)
  • 1.5 tbsp Olive oil or ghee
  • 0.5 tsp Salt(optional)
  • 0.25 tsp Black pepper

Instructions

  1. 1

Chop spinach. If stems are tough, remove them; then chop finely.

  2. 2

Whisk eggs until smooth. Set aside.

  3. 3

Heat oil/ghee in a skillet over medium. Add ginger, garlic, and (optional) chopped green chili; sauté 30–45 seconds.

  4. 4

Add turmeric and cumin; stir 20–30 seconds until fragrant.

  5. 5

Add spinach and cook until wilted and moisture reduces, 3–4 minutes.

  6. 6

Reduce heat to low. Pour in eggs and stir slowly, scraping bottom to form soft curds.

  7. 7

Season with garam masala, salt (if needed), and black pepper. Cook until just set, 2–3 minutes.

  8. 8

Cool 2 minutes, then portion into bite-sized spoonfuls.
