Ingredients

  • 8 eggs
  • 3 cups spinach
  • 1 onion (finely chopped)(optional)
  • 2 cloves garlic (minced)(optional)
  • 1 tsp ginger (grated)(optional)
  • 1 tbsp ghee or butter
  • 1/2 tsp turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander(optional)
  • 1/2 tsp garam masala(optional)
  • 1/2 tsp salt(optional)
  • 1/4 tsp black pepper(optional)
  • 1 tbsp lemon juice(optional)

Instructions

  1. 1

Chop spinach finely. If very wet, sauté it briefly in a dry pan until most moisture evaporates, then set aside.

  2. 2

Whisk eggs until uniform. Set aside.

  3. 3

Heat ghee/butter in a skillet over medium. Add onion (if using) and cook until soft and lightly golden, 5–7 minutes.

  4. 4

Add garlic and ginger (if using) and cook 30 seconds.

  5. 5

Add turmeric, cumin, coriander, and salt. Stir 20–30 seconds to bloom spices.

  6. 6

Add spinach and stir to combine.

  7. 7

Lower heat to medium-low. Pour in eggs and stir slowly with a spatula, scraping the bottom, until curds form and moisture is absorbed, 6–8 minutes.

  8. 8

Finish with garam masala and black pepper; add lemon juice if using.

  9. 9

Portion into 12–16 small spoonful bites on a plate and serve warm.
