Ingredients

  • 8 large Eggs
  • 10 oz Spinach
  • 2 tbsp Ghee or butter
  • 1/2 cup Onion (finely chopped)(optional)
  • 2 cloves Garlic (minced)(optional)
  • 1 tsp Ginger (grated)(optional)
  • 1/2 tsp Turmeric
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1/2 tsp Garam masala
  • 1/2 tsp Salt
  • 1 tbsp Lemon juice(optional)

Instructions

  1. 1

Blanch spinach in a microwave-safe bowl with a splash of water (cover) for 1–2 minutes, then squeeze dry and chop.

  2. 2

Heat ghee in a skillet over medium. Sauté onion (if using) until translucent, then add garlic and ginger for 30–45 seconds.

  3. 3

Add turmeric, cumin, coriander, and salt. Stir 20–30 seconds to bloom spices.

  4. 4

Add chopped spinach and cook 2 minutes to drive off moisture.

  5. 5

Crack eggs into the pan and scramble gently, breaking curds slowly until just set (about 4–6 minutes).

  6. 6

Stir in garam masala and lemon juice (if using). Cook 30 seconds more.

  7. 7

Cool 3 minutes, then portion into 12–16 bite-size pieces. Serve warm.
