Ingredients

  • 1 lb Ground turkey
  • 1 bag Spinach
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 tbsp Fresh ginger
  • 2 tbsp Tomato paste
  • 1 tsp Cumin seeds
  • 1 tsp Ground turmeric
  • 1 tsp Ground coriander
  • 1 tsp Garam masala
  • 2 tbsp Olive oil
  • 1.5 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Lemon juice

Instructions

  1. 1

Make turkey patties: season ground turkey with salt and pepper. Form into 6 small patties.

  2. 2

Heat 1 tbsp olive oil in a skillet over medium-high. Sear patties 3–4 minutes per side until browned and cooked through. Remove to a plate.

  3. 3

In the same skillet, add remaining olive oil. Add cumin seeds; toast 20 seconds.

  4. 4

Add diced onion and cook 8–10 minutes until soft. Stir in garlic and ginger; cook 1 minute.

  5. 5

Add tomato paste, turmeric, coriander, and garam masala. Cook 2 minutes to darken the spices.

  6. 6

Add spinach in batches, stirring until wilted. Add 1/2 cup water if needed to create a thick gravy; simmer 8–10 minutes.

  7. 7

Stir in lemon juice. Taste and adjust salt.

  8. 8

Serve spinach saag with turkey patties.
