Ingredients

  • 1/2 cup coconut flour
  • 2 egg
  • 2 tablespoons olive oil
  • 1 teaspoon garam masala
  • 1/2 teaspoon salt
  • 6 slices prosciutto
  • 1 ripe peach
  • 1/2 cup paneer cheese
  • 1/4 cup cilantro leaves
  • 2 tablespoons fresh mint leaves
  • 1 tablespoon lime juice
  • 1 small, seeded and minced jalapeño(optional)
  • 1/4 teaspoon black pepper

Instructions

  1. 1

Preheat the oven to 425°F (220°C). In a bowl combine coconut flour, garam masala, salt, and black pepper; whisk in the eggs and olive oil until a smooth dough forms.

  2. 2

Place the dough between two sheets of parchment paper and roll out to a 10‑inch circle about 1/4‑inch thick; remove the top parchment and bake on the bottom sheet for 10 minutes until lightly golden.

  3. 3

While the crust bakes, slice the peach into thin wedges and crumble the paneer. In a small blender, combine cilantro, mint, lime juice, jalapeño (if using) and a pinch of salt; blend to a thin chutney.

  4. 4

Remove the crust, top with prosciutto slices, peach wedges, and crumbled paneer; return to the oven and bake another 8‑10 minutes until the cheese softens and the prosciutto crisps.

  5. 5

Drizzle the cilantro‑mint chutney over the hot pizza, slice, and serve immediately.
