Ingredients

  • 8 Eggs
  • 6 cups Spinach
  • 1 medium Onion
  • 2 medium Tomatoes
  • 1 Green chili(optional)
  • 1 tbsp Ginger
  • 4 cloves Garlic
  • 2 tsp Garam masala
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1/2 tsp Turmeric
  • 1 tsp Kashmiri chili powder (or paprika)
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 cup Fresh cilantro(optional)
  • 1 tbsp Lemon juice(optional)

Instructions

  1. 1

Chop onion, tomatoes, ginger, and garlic. If using spinach stems, chop finely too.

  2. 2

Heat olive oil in a skillet. Sauté onion until soft and lightly golden (6–8 minutes).

  3. 3

Add ginger, garlic, and green chili; cook 30–60 seconds.

  4. 4

Add spices (cumin, coriander, turmeric, chili powder, garam masala) and stir 20–30 seconds until fragrant.

  5. 5

Add tomatoes and cook until they break down into a thick masala (6–8 minutes).

  6. 6

Add spinach and cook until wilted and most moisture evaporates (3–4 minutes).

  7. 7

Crack eggs into a bowl, whisk lightly, and season with a pinch of salt.

  8. 8

Lower heat to medium-low. Pour eggs into the skillet and stir gently, forming soft curds; cook 2–4 minutes until just set.

  9. 9

Finish with lemon juice and cilantro (optional). Serve hot.
