  • 1/2 tsp Ground cumin
  • 1/2 tsp Turmeric
  • 1/4 tsp Red chili powder(optional)
  • 1/4 cup Cilantro (chopped)(optional)
  • 1 tbsp Neutral oil(optional)
  • 1/2 tsp Salt(optional)

Instructions

  1. 1

Heat oil in a skillet over medium. Sauté onion until soft and lightly golden, 6–8 minutes.

  2. 2

Add garlic (and ginger if using). Stir 30–45 seconds.

Add spices (garam masala, cumin, turmeric, chili powder if using). Toast 20–30 seconds until fragrant.

  4. 4

Add diced tomato (optional) and cook until it breaks down into a thick masala, 3–5 minutes.

  5. 5

Whisk eggs in a bowl with salt and pepper. Reduce heat to medium-low.

  6. 6

Pour eggs into the skillet and stir gently, scraping bottom and sides, until softly set (2–4 minutes).

  8. 8

Finish with cilantro. Serve as warm bites.
