Ingredients

  • 8 large eggs
  • 4 cups spinach
  • 0.5 cup plain yogurt (unsweetened)
  • 1 medium onion
  • 2 medium tomatoes
  • 3 cloves garlic
  • 1 tbsp ginger
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 0.5 tsp turmeric
  • 0.5 tsp chili powder(optional)
  • 2 tbsp neutral oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions

  1. 1

Chop onion, tomatoes, garlic, and ginger. Blend tomatoes if you prefer a smoother sauce.

  2. 2

Heat oil in a skillet over medium heat. Sauté onion until translucent, 4–5 minutes.

  3. 3

Add garlic and ginger; cook 30–45 seconds.

  4. 4

Add cumin, turmeric, and chili powder; stir 20–30 seconds until fragrant.

  5. 5

Add tomatoes and cook 8–10 minutes until thick. Add garam masala, salt, and pepper.

  6. 6

Add spinach and cook until wilted, 1–2 minutes.

  7. 7

Lower heat to medium-low. Stir in yogurt off-heat for 15 seconds, then return to heat gently.

  8. 8

Crack eggs into a bowl, whisk lightly, then pour into the sauce and scramble slowly, stirring constantly until creamy and just set, 3–5 minutes.

  9. 9

Serve warm as-is (low-carb) or with cauliflower rice.
