Ingredients

  • 8 large eggs
  • 5 cups spinach
  • 1 medium onion
  • 3 cloves garlic
  • 1 tbsp ginger(optional)
  • 2 tbsp tomato paste
  • 2 tsp coriander powder
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 0.25 tsp cayenne pepper(optional)
  • 1.5 tbsp neutral oil
  • 0.75 tsp salt
  • 0.5 tsp black pepper

Instructions

  1. 1

Finely dice onion. Mince garlic and ginger (if using).

  2. 2

Heat oil in a skillet over medium heat. Sauté onion 6–7 minutes until golden at the edges.

  3. 3

Add garlic (and ginger) and cook 1 minute. Stir in turmeric, coriander powder, cayenne (if using), and tomato paste; cook 2 minutes to deepen flavor.

  4. 4

Whisk eggs with salt and black pepper. Pour into the skillet and stir constantly, breaking curds, until about 70% set.

  5. 5

Add spinach and cook until wilted and eggs are fully set, 2–3 minutes.

  6. 6

Turn off heat and sprinkle garam masala; fold through for 30 seconds.

  7. 7

    Rest 2 minutes and serve.
