Ingredients

  • 9 pieces Lamb chops
  • 1 tablespoon Garlic paste
  • 1 tablespoon Ginger paste
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Paprika
  • ½ teaspoon Turmeric powder
  • ½ teaspoon Red chili powder
  • 2 tablespoons Soy sauce (gluten‑free if needed)
  • 1 tablespoon Tamarind paste
  • 2 tablespoons Olive oil
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper

Instructions

  1. 1

In a bowl, combine garlic paste, ginger paste, cumin, coriander, paprika, turmeric, chili powder, soy sauce, tamarind paste, olive oil, salt, and pepper to form a thick masala rub.

  2. 2

Pat the lamb chops dry, then coat each piece thoroughly with the masala rub. Let them rest at room temperature for 5 minutes while you preheat a heavy skillet over medium‑high heat.

  3. 3

Sear the lamb chops in the hot skillet, 2‑3 minutes per side, until a deep brown crust forms. Reduce heat to medium, add a splash (about 1 tablespoon) of extra soy‑tamarind glaze, and continue cooking another 4‑5 minutes, turning once, until the meat reaches an internal temperature of 145 °F (63 °C).

  4. 4

Remove the chops from the pan, let rest for 3 minutes, then slice against the grain and serve.
