Ingredients

  • 2 cups Spinach
  • 2 large Eggs(optional)
  • 1.2 lb Chicken breast or thighs
  • 1/2 cup Plain yogurt
  • 2 tsp Garam masala
  • 1 tsp Ground cumin
  • 1/2 tsp Ground turmeric
  • 1/2 tsp Ground coriander
  • 4 cloves Garlic
  • 1 tbsp Ginger
  • 3 tbsp Tomato paste
  • 1/2 cup Heavy cream
  • 2 tbsp Butter
  • 6 cups Cauliflower rice
  • to taste Salt
  • 1/2 tsp Black pepper

Instructions

    Marinate chicken: mix yogurt, garam masala, cumin, turmeric, coriander, salt, pepper, minced garlic, and grated ginger. Coat chicken and rest 10 minutes.

    Sear chicken in a hot skillet with butter until browned and mostly cooked (about 8–10 minutes). Remove to a plate.

    In the same skillet, cook tomato paste in the remaining butter for 2 minutes to deepen flavor.

    Add heavy cream and a splash of water; simmer 3–4 minutes until glossy and thick.

    Return chicken to the sauce and simmer until tender (about 10 minutes).

    Stir in spinach until wilted (2 minutes).

    Warm cauliflower rice separately (microwave or sauté) and serve topped with butter-chicken-style sauce. Optional: add sliced hard-boiled eggs.
