Ingredients

  • 1 lb Ground turkey
  • 1 Eggs
  • 1/4 cup Plain Greek yogurt
  • 3 cloves Garlic
  • 1 tbsp Ginger
  • 2 tsp Garam masala
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1/2 tsp Turmeric
  • 1/4 tsp Red chili powder(optional)
  • 2 tbsp Tomato paste
  • 1 can (14.5 oz) Crushed tomatoes
  • 1/2 cup Heavy cream
  • 2 tbsp Butter
  • 2 heads (or 5 cups florets) Cauliflower
  • 2 cups Spinach(optional)
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions

    In a bowl, mix turkey, egg, Greek yogurt, minced garlic, grated ginger, garam masala, cumin, coriander, turmeric, chili powder (if using), salt, and pepper. Form into 16–18 meatballs.

    Brown meatballs in a hot skillet with a little butter/oil until all sides are lightly colored, 6–8 minutes. Remove to a plate.

    In the same skillet, sauté tomato paste 1 minute. Add crushed tomatoes and simmer 10 minutes until thick.

    Stir in heavy cream and butter. Simmer 3–4 minutes.

    Add meatballs back and simmer until cooked through, 8–10 minutes.

    Blend cauliflower into mash: steam or microwave cauliflower until very tender, then mash with a little salt and butter (optional).

    Stir spinach into the sauce to wilt (if using). Serve meatballs over cauliflower mash.
