- 500 grams Ground beef (15% fat)
- 1 medium Grated onion (drained)
- 3 pieces Garlic cloves (minced)
- 2 tablespoons Greek yogurt
- 1 teaspoon Dried oregano
- 1 teaspoon Ground cumin
- 1 teaspoon Ground coriander
- 1/2 teaspoon Smoked paprika
- 1 1/2 teaspoons Salt
- 1 teaspoon Black pepper
- 1 tablespoon Olive oil

Place the ground beef in a food processor with the grated onion, garlic, yogurt, and all spices.

Pulse the mixture until it becomes a very smooth, tacky paste; this ensures the classic 'doner' texture.

Shape the meat mixture into a tight, uniform log and wrap it tightly in aluminum foil, twisting the ends like a candy wrapper.

Place the foil log in a baking dish and bake at 180°C (350°F) for about 45 to 50 minutes.

Remove from the oven and let the meat rest in the foil for at least 10 minutes to retain juices.

Unwrap the log and brown the outside in a hot pan with a little olive oil for extra crispness.

Using a very sharp knife or a vegetable peeler, shave off thin ribbons of meat from the log.
