- 1 medium Yellow onion, grated and drained
- 3 cloves Garlic cloves, minced
- 1/4 cup Greek yogurt
- 1 teaspoon Ground cumin
- 1 teaspoon Dried oregano
- 1 teaspoon Smoked paprika
- 1 1/2 teaspoons Salt
- 1/2 teaspoon Black pepper
- 1 tablespoon Olive oil
- 4 pieces Pita bread

Place the ground beef in a food processor and pulse until it reaches a smooth, paste-like consistency.

In a large bowl, combine the beef paste with the grated onion, minced garlic, yogurt, and all spices.

Knead the mixture by hand for 5 minutes to ensure the proteins bind and the texture becomes elastic.

Form the meat into a tight, uniform log shape and wrap it tightly in plastic wrap; refrigerate for at least 2 hours.

Preheat your oven to 350°F (175°C) and place the meat log on a wire rack over a baking sheet.
