  • 500 g Ground Lamb
  • 250 g Ground Beef
  • 1 large Onion
  • 3 cloves Garlic
  • 1 tsp Dried Oregano
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 tsp Smoked Paprika
  • 1 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 4 pieces Pita Bread
  • 1/2 cup Greek Yogurt(optional)

    Preheat your oven to 180°C (350°F) and line a baking tray with foil.

    Grate the onion and squeeze out all excess liquid using a fine-mesh sieve or cheesecloth.

    In a large bowl, combine the ground lamb, beef, grated onion, minced garlic, and all the spices.

    Knead the meat mixture vigorously for 5-10 minutes or use a food processor to achieve a very smooth, paste-like consistency.

    Shape the meat into a tight, uniform loaf shape and wrap it tightly in aluminum foil, poking a few holes in the bottom for fat to drain.

    Place the loaf on a wire rack over a baking tray and bake for 60 minutes until the internal temperature reaches 75°C (165°F).

    Remove from the oven, let it rest for 10 minutes, then unwrap and slice into very thin ribbons using a sharp knife or peeler.

    Flash-fry the sliced meat in a hot pan for 1-2 minutes to get crispy edges before serving in pita bread with salad.
