Ingredients

  • 2 tbsp dried hibiscus (jamaica) tea
  • 1 cup water
  • 1 cup coconut milk (full-fat)
  • 2 tbsp honey
  • 1 tsp lime zest
  • 1 tbsp fresh lime juice
  • 1/8 tsp sea salt

Instructions

  1. 1

Brew the hibiscus: bring the water to a simmer, add dried hibiscus, and steep/simmer for 10 minutes. Strain to make hibiscus tea.

  2. 2

Sweeten and flavor: while the tea is warm, whisk in honey until dissolved, then stir in coconut milk, lime zest, lime juice, and sea salt.

  3. 3

Chill quickly: pour the mixture into a shallow container and refrigerate 10 minutes to cool.

  4. 4

Churn/freeze: churn in an ice-cream maker until sorbet-like (about 10 minutes), then transfer to a freezer-safe container and freeze for 1–2 hours to firm.
