- 400 g Lamb shoulder, cubed
- 2 tbsp Rogan Josh spice blend
- 1 tbsp Gochujang (Korean chili paste)
- 1 medium Onion, finely chopped
- 3 Garlic cloves, minced
- 1 tsp Fresh ginger, grated
- 1/2 cup Tomato puree
- 1/4 cup Plain yogurt
- 2 tbsp Vegetable oil
- 1 cup Water or lamb stock
- to taste Salt
- 2 tbsp Fresh cilantro, chopped (for garnish)(optional)
Instructions

Heat the oil in a heavy-bottomed pot over medium heat; add the chopped onion and sauté for 5 minutes until translucent.

Stir in the garlic, ginger, and rogan josh spice blend; cook for 1 minute to release aromatics.

Add the lamb cubes and brown on all sides, about 5–7 minutes.

Mix in the tomato puree and gochujang, coating the meat; simmer for 2 minutes.

Pour in the water or stock, bring to a gentle boil, then reduce heat to low, cover, and simmer for 70 minutes, stirring occasionally.

Stir in the yogurt, season with salt, and continue to simmer uncovered for another 10 minutes to thicken the gravy.

Serve hot, garnished with chopped cilantro if desired.
