Ingredients

  • 200 g Lo mein or spaghetti noodles (dry)
  • 1 tbsp Fresh ginger (grated)
  • 2 cloves Garlic (minced)
  • 3 tbsp Soy sauce (low-sodium if preferred)
  • 1 tbsp Rice vinegar
  • 1 tbsp Sesame oil
  • 1 tsp Brown sugar or honey(optional)
  • 1 tbsp Neutral oil (for stir-fry)
  • 1 cup Broccoli florets
  • 1/2 cup Bell pepper (thinly sliced)
  • 1/2 cup Carrot (julienned)
  • 2 tbsp Green onions (sliced)(optional)
  • 1 tsp Sesame seeds(optional)

Instructions

  1. 1

Bring a large pot of salted water to a boil. Cook the noodles according to package directions until springy, then drain and set aside.

  2. 2

While the noodles cook, whisk soy sauce, rice vinegar, sesame oil, and (if using) brown sugar/honey in a bowl. Stir in the grated ginger and minced garlic.

  3. 3

Heat neutral oil in a large skillet or wok over medium-high heat. Stir-fry broccoli, carrot, and bell pepper for about 5–7 minutes until crisp-tender.

  4. 4

Add the cooked noodles to the skillet and pour in the ginger-soy garlic sauce. Toss well for 2–3 minutes until evenly coated and glossy. Serve immediately, topped with green onions and sesame seeds if desired.
