Ingredients

  • 2 fillets white fish fillet (cod, tilapia, or sea bass)
  • 1/4 tsp salt
  • 2 tbsp fresh ginger, finely julienned
  • 3 stalks scallions (green onions), thinly sliced
  • 2 tbsp neutral oil (or peanut oil)
  • 1.5 tbsp soy sauce
  • 1 tbsp Shaoxing wine (or dry sherry)(optional)
  • 2 cups water (for steaming)

Instructions

  1. 1

Pat the fish fillets dry and season lightly with salt. Place on a heatproof plate and sprinkle with Shaoxing wine (if using).

  2. 2

Arrange half the ginger and half the scallions over the fish. Bring the water to a steady simmer in a steamer, then steam the fish for 10–12 minutes, until just cooked through.

  3. 3

Carefully remove the plate. Top with the remaining ginger and scallions.

  4. 4

Heat the oil until shimmering, then carefully pour the hot oil over the fish to sizzle. Drizzle with soy sauce and serve immediately.
