Ingredients
- 1 cup Arborio rice
- 2 tbsp White miso paste
- 1 tbsp Fresh ginger, grated
- 4 cups Vegetable broth
- 1/4 cup Dry white wine(optional)
- 2 tbsp Olive oil
- 1/2 Yellow onion, finely diced
- 1 tbsp Butter(optional)
- 2 Scallions, sliced(optional)
- to taste Salt and black pepper
Instructions
- 1
Prep: grate the ginger, dice the onion, slice the scallions, and warm the vegetable broth in a saucepan over low heat (about 10 minutes).
- 2
Heat olive oil in a large skillet over medium heat. Sauté the onion for 3 minutes, then add the ginger and cook 1 minute until fragrant.
- 3
Add the Arborio rice and toast, stirring, for 2 minutes. If using, add the white wine and stir until absorbed.
- 4
Add warm broth one ladle at a time, stirring frequently and letting each addition absorb before adding the next, about 20-25 minutes until the rice is creamy and al dente.
- 5
Stir in the miso paste and butter until fully incorporated. Season with salt and pepper, top with scallions, and serve immediately.
