
Ginger Chicken Wonton Soup

Ingredients
- 1 lb ground chicken breast
- 3 tbsp fresh ginger, minced
- 30 pieces wonton wrappers
- 6 cups low-sodium chicken broth
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 3 stalks green onions, sliced
- 2 cups baby bok choy, halved
- 2 cloves garlic, minced
- 0.25 tsp white pepper
Instructions

In a medium bowl, combine the ground chicken, half of the minced ginger, half of the garlic, and 1 tablespoon of soy sauce.

Place a teaspoon of the chicken mixture in the center of a wonton wrapper.

Moisten the edges of the wrapper with water, fold into a triangle, and press the edges firmly to seal.

In a large pot, bring the chicken broth, remaining ginger, and remaining garlic to a gentle boil.

Reduce the heat to a simmer and stir in the remaining soy sauce and white pepper.

Carefully drop the wontons into the simmering broth and cook for 4-5 minutes until the chicken is cooked through.

Add the baby bok choy to the pot during the last 2 minutes of cooking until wilted.

Drizzle with sesame oil and garnish with fresh green onions before serving.
