  • 0.5 cup Whole milk
  • 0.33 cup Wildflower honey
  • 2 inches Fresh ginger root, peeled and sliced
  • 2.25 teaspoons Powdered gelatin
  • 3 tablespoons Cold water
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt
  • 1 tablespoon Crystallized ginger for garnish(optional)
  • 1 tablespoon Extra honey for drizzling(optional)

Instructions

    In a small bowl, sprinkle the gelatin over the cold water and let it bloom for 5 to 10 minutes until softened.

    In a medium saucepan, combine the heavy cream, milk, honey, sliced fresh ginger, and salt.

    Heat the cream mixture over medium heat until it begins to simmer, then immediately remove from heat.

    Cover the saucepan and let the ginger steep in the warm cream for 15 minutes to infuse the flavor.

    Strain the mixture through a fine-mesh sieve into a clean bowl to remove the ginger slices, then whisk in the vanilla extract.

    Add the bloomed gelatin to the warm cream mixture and whisk continuously until the gelatin is completely dissolved.
