Ingredients

  • 1.5 cups Arborio rice
  • 5 cups Vegetable broth
  • 0.5 teaspoon Saffron threads
  • 2 whole Shallots, finely minced
  • 0.5 cup Dry white wine
  • 3 tablespoons Unsalted butter
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons Olive oil
  • 2 whole Garlic cloves, minced
  • 0.25 teaspoon Ground turmeric(optional)

Instructions

    In a medium saucepan, bring the vegetable broth to a low simmer and stir in the saffron threads to infuse.

    Heat the olive oil and 1 tablespoon of butter in a large heavy-bottomed skillet over medium heat.

    Add the shallots and garlic, sautéing for 3 minutes until translucent but not browned.

    Add the Arborio rice to the skillet, stirring constantly for 2 minutes to toast the grains until the edges are transparent.

    Pour in the white wine and stir until the liquid is fully absorbed by the rice.

    Add the warm saffron broth one ladle at a time, stirring frequently and waiting for the liquid to absorb before adding more.

    Continue this process for about 20 minutes until the rice is creamy and al dente.

    Remove from heat and stir in the remaining butter and Parmesan cheese; cover for 2 minutes before serving.
