Ingredients

  • 180 g spaghetti
  • 3 tbsp olive oil
  • 3 cloves garlic (minced)
  • 60 g Parmesan cheese (finely grated)
  • 1 tsp black pepper (freshly ground)
  • 1 tsp salt(optional)
  • 120 ml pasta water

Instructions

  1. 1

Bring a large pot of salted water to a boil. Cook the spaghetti until al dente, about 10–12 minutes, then reserve about 120 ml of pasta water and drain.

  2. 2

While the pasta cooks, heat the olive oil in a large skillet over low to medium-low heat. Add the minced garlic and cook, stirring, until fragrant and lightly golden, about 2–3 minutes.

  3. 3

Add the drained spaghetti to the skillet and toss to coat in the garlic oil. Add pasta water a splash at a time, tossing until glossy.

  4. 4

Turn off the heat. Stir in the Parmesan and black pepper until creamy and well combined. Taste and adjust with more pepper (and salt only if needed). Serve immediately.
