Ingredients

  • 180 g spaghetti
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup Parmesan cheese, finely grated
  • 1 tsp black pepper, freshly ground
  • 1 tsp salt (for pasta water)(optional)
  • 1/4 cup pasta water

Instructions

  1. 1

Bring a large pot of salted water to a boil. Cook the spaghetti until al dente, about 10–12 minutes.

  2. 2

While the pasta cooks, warm the olive oil in a small pan over low heat and sauté the minced garlic for about 1–2 minutes until fragrant (do not brown).

  3. 3

Reserve 1/2 cup of pasta water, then drain the spaghetti. Immediately toss the hot spaghetti with the garlic olive oil.

  4. 4

Add Parmesan and black pepper, then loosen with a splash of reserved pasta water (about 1/4 cup) until the sauce turns silky and coats the noodles. Serve right away.
