Ingredients

  • 180 g Spaghetti (or linguine)
  • 2 tbsp Olive oil
  • 3 cloves Garlic
  • 1/2 cup Parmesan cheese, finely grated
  • 1/2 tsp Black pepper
  • 1 tsp Salt(optional)
  • 1/4 cup Pasta water

Instructions

  1. 1

Bring a pot of salted water to a boil. Cook the spaghetti until al dente, about 10–12 minutes, then reserve 1/4 cup of pasta water and drain.

  2. 2

While the pasta cooks, warm the olive oil in a large pan over low heat. Add the minced garlic and cook gently for about 1 minute until fragrant (do not brown).

  3. 3

Add the drained pasta to the pan and toss to coat. Add pasta water a splash at a time, then stir in the Parmesan and black pepper until glossy and creamy.

  4. 4

Taste and adjust seasoning with more black pepper (and salt only if needed). Serve immediately.
