Ingredients

  • 180 g Spaghetti (or linguine)
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 1 tbsp Lemon zest
  • 2 tbsp Lemon juice
  • 1/2 cup Parmesan cheese, finely grated
  • 1/4 tsp Salt(optional)
  • 1/4 tsp Black pepper(optional)

Instructions

  1. 1

Bring a large pot of salted water to a boil. Cook spaghetti until al dente, about 10–12 minutes; reserve about 1/2 cup pasta water, then drain.

  2. 2

While pasta cooks, heat olive oil in a large skillet over low to medium-low heat. Add minced garlic and cook until fragrant, about 1–2 minutes (do not brown).

  3. 3

Add drained pasta to the skillet. Toss with garlic-infused oil, lemon zest, and lemon juice. Add a splash of reserved pasta water as needed to make it glossy and lightly creamy.

  4. 4

Remove from heat and toss in Parmesan until melted and evenly coated. Season with salt and black pepper to taste, then serve immediately.
