Ingredients

  • 450 g Large shrimp, peeled and deveined
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 120 g Fresh spinach
  • 1 large Lemon (zest and juice)
  • 0.25 tsp Red pepper flakes(optional)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped(optional)

Instructions

    Prep (10 minutes): Pat shrimp dry, mince garlic, zest and juice the lemon, and chop parsley if using.

    Cook (15 minutes): Heat olive oil in a large skillet over medium-high heat. Add shrimp in a single layer, season with salt and black pepper, and cook 1–2 minutes per side until pink and just cooked through. Transfer shrimp to a plate.

    In the same skillet, lower heat to medium. Add garlic and red pepper flakes (if using) and sauté for about 30 seconds until fragrant.

    Add spinach and cook 1–2 minutes, stirring, until wilted.

    Return shrimp to the skillet. Add lemon zest and lemon juice and toss for 30–60 seconds to coat and warm through. Stir in parsley if using, then serve immediately.
