Ingredients

  • 300 g boneless skinless chicken breast, sliced thin
  • 4 cloves garlic, minced
  • 3 tbsp soy sauce
  • 150 g broccoli florets
  • 1 medium bell pepper, sliced
  • 2 tbsp vegetable oil
  • 1 tsp cornstarch
  • 1 tsp sesame oil(optional)
  • 2 cups cooked rice, for serving(optional)

Instructions

  1. 1

Toss the sliced chicken with 1 tbsp soy sauce and the cornstarch; let sit 5 minutes while you prep the vegetables (about 15 minutes total prep).

  2. 2

Heat 1 tbsp oil in a large wok or skillet over high heat. Add the chicken in a single layer and stir-fry 3-4 minutes until golden and cooked through. Remove and set aside.

  3. 3

Add remaining oil to the wok, then stir-fry the garlic for 30 seconds until fragrant. Add broccoli and bell pepper and stir-fry 3-4 minutes until crisp-tender.

  4. 4

Return the chicken to the wok, add the remaining soy sauce and sesame oil, and toss 1-2 minutes until everything is coated and heated through.

  5. 5

    Serve hot over steamed rice.
