Ingredients

  • 150 g Green beans
  • 1 medium Carrots
  • 1 medium Cucumber
  • 200 g Potatoes
  • 2 large Eggs
  • 3 tbsp Peanut butter (creamy or chunky)
  • 1.5 tbsp Soy sauce
  • 1 tbsp Brown sugar
  • 1 tbsp Lime juice
  • 1 clove Garlic
  • 2 tbsp Water
  • 0.25 tsp Salt(optional)
  • 1 tsp Vegetable oil(optional)

Instructions

  1. 1

Prep (about 20 minutes total): Cut carrots into thin matchsticks, slice cucumber, and trim green beans. Peel and cube the potatoes.

  2. 2

Cook (about 15 minutes total): Boil potatoes in salted water until just tender, about 8–10 minutes. Add green beans for the last 3–4 minutes, then drain and rinse briefly under cool water to keep them bright.

  3. 3

Cook the eggs: In the same pot (or fresh water), boil eggs until hard-boiled, about 10 minutes; cool briefly, peel, and halve.

  4. 4

Make peanut dressing: In a small bowl, mix peanut butter, soy sauce, brown sugar, lime juice, minced garlic, and water until smooth. If needed, stir in a little more water to reach a pourable consistency.

  5. 5

Assemble: Arrange vegetables on plates, top with egg, and spoon peanut dressing over everything. Serve immediately.
