Ingredients

  • 2 cups Cooked jasmine rice (day-old preferred)
  • 2 tbsp Sweet soy sauce (kecap manis)
  • 2 tbsp Neutral oil (for frying)
  • 2 cloves Garlic, minced
  • 1 small Shallot, finely chopped
  • 2 Eggs
  • 1/4 tsp Salt(optional)
  • 1/8 tsp Ground white pepper(optional)

Instructions

  1. 1

Prep (10 minutes): Mince the garlic and finely chop the shallot. Break out the cooked rice and separate any clumps with a fork.

  2. 2

Cook (15 minutes): Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add shallot and cook 1 minute, then add garlic and cook 30 seconds until fragrant.

  3. 3

Cook (15 minutes): Add the rice to the pan and stir-fry 5–7 minutes, breaking up clumps. Drizzle in kecap manis and toss until the rice is evenly glossy. Season with salt and white pepper if using.

  4. 4

Cook (15 minutes): Push the rice to one side. Add the remaining 1 tbsp oil, crack in the eggs, and fry until the whites are set and yolks are cooked to your liking.

  5. 5

Cook (15 minutes): Serve immediately with the fried eggs on top.
