Ingredients
- 2 cups Toasted Cassava Flour (Farinha de Mandioca)
- 4 units Large Eggs
- 4 tablespoons Unsalted Butter
- 1 tablespoon Olive Oil
- 0.5 cup Yellow Onion, finely diced
- 2 cloves Garlic, minced
- 0.25 cup Fresh Scallions, chopped
- 2 tablespoons Fresh Parsley, chopped
- 1 teaspoon Salt
- 0.5 teaspoon Black Pepper

In a small bowl, lightly whisk the eggs with a pinch of salt and pepper.

Heat a large skillet over medium heat and add one tablespoon of butter and the olive oil.

Pour the eggs into the skillet and scramble them gently until just set but still moist, then remove eggs from the pan and set aside.

In the same skillet, add the remaining three tablespoons of butter and sauté the onions until translucent.

Add the minced garlic to the onions and cook for another minute until fragrant.

Gradually add the cassava flour to the skillet, stirring constantly to toast the flour in the butter for about 3-5 minutes until golden brown.

Fold the cooked eggs back into the flour mixture and stir until well combined and heated through.
