Ingredients

  • 2 lbs Yukon Gold potatoes
  • 0.5 cup Mayonnaise
  • 3 large Hard-boiled eggs
  • 0.25 cup Red onion
  • 1 tablespoon Yellow mustard
  • 1 teaspoon Apple cider vinegar
  • to taste Salt and black pepper
  • 1 tablespoon Fresh parsley(optional)

Instructions

    Peel the potatoes and cut them into 1-inch cubes.

    Place potatoes in a large pot of salted water and bring to a boil. Cook for 10-15 minutes until tender but firm.

    Drain the potatoes and let them cool slightly. In a small bowl, whisk together mayonnaise, mustard, and vinegar.

    In a large mixing bowl, combine the warm potatoes, chopped hard-boiled eggs, and finely diced red onion.

    Fold in the dressing gently to avoid mashing the potatoes.

    Season with salt and pepper. Garnish with fresh parsley.

    Refrigerate for at least 1 hour before serving to allow flavors to meld.
