- 1 pound Ground beef
- 10 count Empanada dough discs
- 1 1/2 cups Shredded cheddar cheese
- 1/2 cup Diced onion
- 2 cloves Minced garlic
- 1 tablespoon Tomato paste
- 1 teaspoon Ground cumin
- 1/2 teaspoon Smoked paprika
- 1 pinch Salt and pepper
- 1 large Egg (for wash)
- 1 tablespoon Olive oil

Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

Heat olive oil in a skillet over medium heat and sauté onions and garlic until softened.

Add the ground beef to the skillet, browning it thoroughly and draining any excess fat.

Stir in the tomato paste, cumin, paprika, salt, and pepper; cook for 2 minutes then let cool slightly.

Place a spoonful of the beef mixture onto the center of each dough disc and top with shredded cheese.

Fold the dough over the filling to create a half-moon shape and crimp the edges with a fork to seal.
