Ingredients

  • 3/4 cup orzo (dry)
  • 2 cups chicken or vegetable broth
  • 1/2 cup frozen peas
  • 1/4 cup Parmesan cheese, finely grated
  • 2 eggs
  • 1 tbsp olive oil
  • 1 clove garlic, minced(optional)
  • 1/4 tsp salt(optional)
  • 1/4 tsp black pepper(optional)

Instructions

  1. 1

Prep (10 minutes): If using, mince the garlic and grate the Parmesan. Crack the eggs into a bowl and whisk until smooth.

  2. 2

Cook (15 minutes): In a medium pan, heat the olive oil over medium heat. Add garlic (if using) and cook for 30 seconds. Add the orzo and stir to lightly coat.

  3. 3

Add the broth and bring to a gentle simmer. Cook, stirring occasionally, until the orzo is tender and the liquid is mostly absorbed, about 10–12 minutes.

  4. 4

Stir in the peas and cook for 2–3 minutes until hot. Turn the heat to low.

  5. 5

Finish: Stir in the Parmesan. Pour in the whisked eggs while stirring constantly, cooking just until the eggs form soft curds, about 1 minute. Season with salt and black pepper to taste and serve immediately.
