Ingredients
- 2 cups Heavy cream
- 1 cup Whole milk
- 0.5 cup Granulated sugar
- 2.25 teaspoons Powdered gelatin
- 1 teaspoon Vanilla bean paste
- 3 tablespoons Cold water
- 1 cup Fresh raspberries
- 1 teaspoon Lemon juice
- 1 tablespoon Honey
- 1 pinch Salt

Sprinkle the gelatin over the cold water in a small bowl and let it bloom for 5 minutes until softened.

In a medium saucepan, combine the heavy cream, milk, sugar, and salt over medium heat.

Heat the cream mixture until it begins to simmer, then immediately remove from heat before it boils.

Stir the bloomed gelatin and vanilla bean paste into the warm cream until completely dissolved.

Pour the mixture into 6 individual ramekins or glasses and refrigerate for at least 4 hours until set.

While the panna cotta sets, blend the raspberries, honey, and lemon juice until smooth to create the coulis.

Strain the berry mixture through a fine-mesh sieve to remove seeds, then chill until ready to serve.
