Ingredients
- 1 1/2 lbs Boneless skinless chicken breasts, pounded to 1/2 inch thickness
- 1 cup Panko breadcrumbs
- 1/2 cup Grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon Garlic powder
- 1 unit Large egg, beaten
- 2 tablespoons Olive oil
- 1 cup Marinara sauce
- 1 1/2 cups Shredded mozzarella cheese
- 2 tablespoons Fresh basil leaves, chopped(optional)
Instructions
- 1
Preheat your oven to 425°F (220°C) and lightly grease a large rimmed baking sheet with non-stick spray or olive oil.
- 2
In a shallow bowl, whisk the egg. In a separate shallow bowl, combine panko, parmesan, Italian seasoning, and garlic powder.
- 3
Dip each chicken breast into the egg, shaking off excess, then press firmly into the breadcrumb mixture until fully coated.
- 4
Place the breaded chicken onto the prepared sheet pan and drizzle the tops lightly with olive oil to help them brown.
- 5
Bake for 15 minutes. Remove the pan from the oven and flip the chicken pieces over carefully.
- 6
Spoon about 1/4 cup of marinara sauce over each chicken breast and top generously with shredded mozzarella.
- 7
Return the pan to the oven and bake for another 8-10 minutes until the cheese is bubbly and the chicken reaches an internal temperature of 165°F.
- 8
Garnish with fresh basil before serving directly from the pan.
