Easy One Pan Chicken Fried Rice

Ingredients
- 1 lb Chicken breast, diced into small cubes
- 3 cups Cooked white rice (preferably day-old)
- 1 cup Frozen peas and carrots mix
- 3 large Eggs, lightly beaten
- 3 tablespoons Soy sauce
- 1 tablespoon Sesame oil
- 2 tablespoons Vegetable oil
- 3 cloves Garlic, minced
- 1/4 cup Green onions, sliced
- 1/2 teaspoon Black pepper(optional)
Instructions

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the diced chicken and cook until browned and cooked through, about 5-7 minutes, then remove chicken from the pan and set aside.

In the same pan, add the remaining tablespoon of oil and sauté the garlic and frozen peas and carrots until tender, about 3 minutes.

Push the vegetables to the side of the pan and pour in the beaten eggs, scrambling them until fully cooked.

Add the cooked rice and the cooked chicken back into the pan, breaking up any large clumps of rice.

Drizzle the soy sauce and sesame oil over the mixture and stir constantly for 2-3 minutes to fry the rice.

Season with black pepper and stir in the green onions just before serving.
