Ingredients

  • 4 cups Cooked white rice (chilled)
  • 1 lb Chicken breast, diced
  • 3 tbsp Canola oil
  • 4 tbsp Soy sauce (ensure nut-free facility)
  • 2 large Eggs, beaten
  • 1 cup Frozen peas and carrots
  • 2 cloves Garlic, minced
  • 1 tsp Fresh ginger, grated
  • 0.5 cup Green onions, sliced
  • 0.5 tsp Black pepper

Instructions

    Heat one tablespoon of canola oil in a large wok or skillet over medium-high heat.

    Add the diced chicken and cook until browned and fully cooked through, then remove from the pan and set aside.

    Pour the beaten eggs into the pan and scramble quickly until set, then remove and set aside with the chicken.

    Add the remaining two tablespoons of oil to the pan and sauté the garlic, ginger, and frozen peas and carrots for 2 minutes.
