Ingredients
- 4 cups Green cabbage, shredded
- 2 medium Carrots, julienned or shredded
- 2 tbsp Green onions, thinly sliced
- 1 tbsp Sesame seeds
- 3 tbsp Rice vinegar
- 2 tbsp Soy sauce (or tamari)
- 1 tbsp Honey
- 1 tsp Fresh ginger, grated
- 1 clove Garlic, minced
- 1 tsp Sesame oil
- 1 tbsp Neutral oil (for dressing emulsion)
- 1 cup Crispy noodles (optional)(optional)

Prep (about 20 minutes): Shred the cabbage, julienne/shred the carrots, and slice the green onions. Grate the ginger and mince the garlic.

Make the sesame-ginger dressing (about 5 minutes): In a bowl, whisk rice vinegar, soy sauce, honey, grated ginger, minced garlic, sesame oil, and neutral oil until the honey dissolves.

Assemble: In a large bowl, toss cabbage and carrots with about 3/4 of the dressing. Taste and add more dressing if needed.

Finish: Sprinkle with sesame seeds and green onions. Top with crispy noodles if using, then serve immediately.
