Ingredients

  • 0.5 cups Whole milk
  • 0.33 cups Granulated sugar
  • 2.25 teaspoons Powdered gelatin
  • 1 teaspoon Vanilla bean paste
  • 3 tablespoons Cold water
  • 1.5 cups Mixed berries (raspberries, blueberries, strawberries)
  • 1 tablespoon Lemon juice
  • 2 tablespoons Powdered sugar
  • 1 pinch Salt

    In a small bowl, sprinkle the gelatin over the cold water and let it bloom for 5 to 10 minutes.

    In a medium saucepan, combine the heavy cream, milk, granulated sugar, and salt over medium heat.

    Heat the cream mixture until it begins to simmer, then immediately remove from heat; do not let it reach a full boil.

    Whisk the bloomed gelatin and vanilla bean paste into the warm cream until completely dissolved and smooth.

    Pour the mixture into four ramekins or glasses and refrigerate for at least 4 to 6 hours, or until completely set.

    For the coulis, combine berries, lemon juice, and powdered sugar in a small pot over medium heat for 5 minutes.
