Ingredients
- 2 cups Heavy cream
- 1 cup Whole milk
- 0.5 cup Granulated sugar
- 2.25 tsp Powdered gelatin
- 3 tbsp Cold water
- 1 whole Vanilla bean, split and scraped
- 2 cups Mixed berries (strawberries, blueberries, raspberries)
- 1 tbsp Lemon juice
- 2 tbsp Honey
- 1 pinch Salt

In a small bowl, sprinkle the gelatin over the cold water and let it bloom for 5 to 10 minutes.

In a medium saucepan, combine heavy cream, milk, sugar, and the vanilla bean seeds and pod.

Heat the cream mixture over medium heat until it begins to simmer, then immediately remove from heat; do not let it boil.

Whisk the bloomed gelatin into the warm cream mixture until completely dissolved, then strain through a fine-mesh sieve.

Pour the mixture into four ramekins or glasses and refrigerate for at least 4 hours, or until completely set.

For the compote, combine mixed berries, honey, and lemon juice in a small saucepan over medium-low heat.
