Ingredients

  • 2 cups Heavy cream
  • 1 cup Whole milk
  • 0.5 cup Granulated sugar
  • 2.25 tsp Powdered gelatin
  • 3 tbsp Cold water
  • 1 whole Vanilla bean, split and scraped
  • 2 cups Mixed berries (strawberries, blueberries, raspberries)
  • 1 tbsp Lemon juice
  • 2 tbsp Honey
  • 1 pinch Salt

Instructions

  1. 1

In a small bowl, sprinkle the gelatin over the cold water and let it bloom for 5 to 10 minutes.

  2. 2

In a medium saucepan, combine heavy cream, milk, sugar, and the vanilla bean seeds and pod.

  3. 3

Heat the cream mixture over medium heat until it begins to simmer, then immediately remove from heat; do not let it boil.

  4. 4

Whisk the bloomed gelatin into the warm cream mixture until completely dissolved, then strain through a fine-mesh sieve.

  5. 5

Pour the mixture into four ramekins or glasses and refrigerate for at least 4 hours, or until completely set.

  6. 6

For the compote, combine mixed berries, honey, and lemon juice in a small saucepan over medium-low heat.

  7. 7

Simmer the berries for 8-10 minutes until they break down and the liquid thickens into a syrup.

  8. 8

Allow the compote to cool completely before spooning it over the chilled panna cotta just before serving.
