  • 0.5 cup Extra Virgin Olive Oil
  • 8 pieces Fresh Garlic Cloves, thinly sliced
  • 1 teaspoon Red Pepper Flakes
  • 0.25 cup Fresh Italian Parsley, chopped
  • 2 tablespoons Kosher Salt
  • 0.5 teaspoon Black Pepper(optional)
  • 1 teaspoon Lemon Juice(optional)
  • 0.5 cup Pasta Water
  • 0.25 cup Parmesan Cheese, freshly grated(optional)

Instructions

    Bring a large pot of water to a boil and add the 2 tablespoons of kosher salt.

    Cook the spaghetti according to package instructions until just shy of al dente.

    While the pasta cooks, combine the olive oil and sliced garlic in a cold, large skillet.

    Heat the skillet over medium-low heat, cooking the garlic slowly until it turns a light golden brown, about 5 minutes.

    Add the red pepper flakes to the oil and cook for another 30 seconds to release their flavor.

    Reserve 1/2 cup of the starchy pasta water, then drain the spaghetti.

    Add the spaghetti and the reserved pasta water to the skillet, tossing vigorously over medium heat to emulsify the sauce.

    Stir in the chopped parsley and lemon juice, then serve immediately with optional parmesan cheese.
