Ingredients
- 2 cups Cooked day-old rice
- 3 large Eggs
- 1 cup Mixed vegetables (peas, carrots, corn)
- 2 tbsp Soy sauce
- 1 tsp Sesame oil
- 2 stalks Scallions (green onions)
- 1 tbsp Neutral oil (for scrambling and stir-fry)
- 1 clove Garlic, minced(optional)
- 1/4 tsp Ground black pepper(optional)
Instructions
- 1
Prep (10 minutes): Dice or mince scallions; mince garlic if using. If rice is clumped, break it up with your fingers.
- 2
Cook (15 minutes): Heat a large skillet or wok over medium-high heat with the neutral oil. Add mixed vegetables and stir-fry 3–4 minutes until hot and lightly tender. Add garlic (if using) and cook 30 seconds.
- 3
Push vegetables to one side. Crack eggs into the empty side and scramble until just set, then mix with the vegetables.
- 4
Add the day-old rice to the pan and stir-fry 6–8 minutes, breaking up any clumps and heating the rice through.
- 5
Season: Stir in soy sauce and black pepper (if using). Turn off heat and drizzle sesame oil over the fried rice. Toss to combine.
- 6
Serve: Top with scallions and serve immediately.
