Ingredients
- 1 1/2 lbs Boneless chicken thighs, cut into bite-sized pieces
- 1 cup Plain Greek yogurt
- 1 tablespoon Lemon juice
- 2 teaspoons Garam masala
- 1 teaspoon Ground turmeric
- 2 tablespoons Vegetable oil or Ghee
- 1 large Yellow onion, finely diced
- 1 tablespoon Fresh ginger, grated
- 4 cloves Garlic cloves, minced
- 15 oz Tomato sauce or crushed tomatoes
- 1 cup Heavy cream
- 1/4 cup Fresh cilantro, chopped(optional)

In a large bowl, whisk together the yogurt, lemon juice, 1 teaspoon of garam masala, and turmeric. Add the chicken pieces and toss to coat thoroughly.

Cover the chicken and refrigerate for at least 1 hour, though overnight is preferred for the most tender results.

Preheat your broiler or grill to high heat. Thread chicken onto skewers and cook for about 5-7 minutes per side until slightly charred and cooked through.

In a large deep skillet or pot, heat the oil or ghee over medium heat. Add the diced onions and sauté until soft and translucent, about 5 minutes.

Stir in the minced garlic and grated ginger, cooking for another 1 minute until fragrant.

Pour in the tomato sauce and the remaining 1 teaspoon of garam masala. Simmer on low heat for 10-15 minutes until the sauce thickens and darkens slightly.

Stir in the heavy cream and the grilled chicken pieces. Simmer for an additional 5 minutes to allow the flavors to meld together.

Garnish with fresh cilantro and serve hot over basmati rice or with warm garlic naan.
