Ingredients

  • 1.5 lb Pork belly, skin on
  • 1/4 cup Soy sauce (low sodium)
  • 2 tablespoons Erythritol (granulated)
  • 1 teaspoon Chinese five‑spice powder
  • 3 cloves Garlic, minced
  • 1 tablespoon Fresh ginger, grated
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Olive oil

Instructions

  1. 1

    1. In a bowl, whisk together soy sauce, erythritol, five‑spice powder, minced garlic, grated ginger, rice vinegar, and olive oil until the sweetener dissolves.

  2. 2

    2. Cut the pork belly into three equal pieces and place them in a resealable bag or shallow dish; pour the marinade over the meat, ensuring all surfaces are coated. Marinate in the refrigerator for at least 30 minutes (or up to 4 hours for deeper flavor).

  3. 3

    3. Preheat the oven to 300°F (150°C). Arrange the marinated pork belly pieces on a rack set over a baking sheet lined with foil to catch drippings.

  4. 4

    4. Roast for 90 minutes, then increase the oven temperature to 425°F (220°C) and roast an additional 15‑20 minutes, basting with any remaining sauce, until the surface is glossy and caramelized.

  5. 5

    5. Remove from the oven, let rest for 10 minutes, then slice thinly against the grain and serve.
