Ingredients

  • 1 lb pork shoulder (thinly sliced) or ground pork
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar or erythritol (low-carb)
  • 1 tsp five-spice powder
  • 3 cloves garlic (minced)
  • 1 tbsp ginger (grated)
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp olive oil
  • 3 cups spinach
  • 12 leaves lettuce leaves (butter or romaine)
  • 1/4 tsp black pepper(optional)

Instructions

  1. 1

In a bowl, mix soy sauce, rice vinegar, sweetener, five-spice, garlic, and ginger.

  2. 2

Heat olive oil in a wok or skillet over medium-high heat. Add pork and cook until browned and nearly cooked through, 8–10 minutes.

  3. 3

Pour in sauce mixture and stir to coat. Simmer 2 minutes.

  4. 4

Mix cornstarch with water to make a slurry. Stir into the pork and cook 30–60 seconds until glossy and thick.

  5. 5

Wilt spinach in a separate pan (or quickly in the wok) until just tender; season with black pepper.

  6. 6

Spoon pork into lettuce boats and serve alongside spinach.
