Ingredients

  • 18 large quail eggs
  • 1/3 cup soy sauce (low-sodium if desired)
  • 1/3 cup water
  • 2 tbsp fresh ginger, finely grated
  • 2 cloves garlic, minced
  • 3 stalks scallions, thinly sliced
  • 1 tbsp rice vinegar
  • 1 tsp brown sugar (or sugar substitute equivalent)(optional)
  • 1 tsp neutral oil
  • 1/4 tsp black pepper(optional)

Instructions

  1. 1

Prep (20 minutes): Rinse quail eggs. Slice scallions and set aside. Grate ginger and mince garlic.

  2. 2

Cook (25 minutes): Place quail eggs in a saucepan and cover with cold water by 1–2 inches. Bring to a gentle boil, then reduce to a simmer and cook 5 minutes for soft yolks.

  3. 3

Drain and cool: Transfer eggs to a bowl of cold water for 5 minutes, then peel carefully.

  4. 4

Simmer marinade: In the same saucepan, combine soy sauce, water, grated ginger, minced garlic, rice vinegar, and (if using) brown sugar. Bring to a simmer and add peeled eggs. Simmer gently 15 minutes, turning occasionally, until the eggs are evenly colored and aromatic.

  5. 5

Finish with scallion sauce: Heat neutral oil in a small pan over medium-low. Add scallions and black pepper (if using) and stir for 30–60 seconds until fragrant. Spoon over the eggs (or toss eggs briefly in the pan) and serve warm.
