Ingredients

  • 8 large Eggs
  • 8 oz Spinach
  • 6 stalks Scallions (chopped)
  • 2 tbsp Soy sauce
  • 1 tbsp Shaoxing wine (or dry sherry)(optional)
  • 1/4 cup Chicken broth (or water)(optional)
  • 2 tbsp Neutral oil
  • 1/4 tsp White pepper(optional)
  • 1/4 tsp Salt(optional)

Instructions

  1. 1

Chop spinach finely. If wet, squeeze to reduce water.

  2. 2

Whisk eggs with soy sauce, Shaoxing (if using), and white pepper; set aside.

  3. 3

Heat a wok or skillet over high. Add 1 tbsp oil.

  4. 4

Quickly stir-fry spinach 1–2 minutes until just wilted; remove to a bowl.

  5. 5

Add remaining oil. Pour in eggs and let them set at the bottom for 10–15 seconds, then scramble into soft curds.

  6. 6

Return spinach to the pan and toss with scallions for 30–45 seconds.

  7. 7

For bite-size squares: spread mixture in a thin layer on a parchment-lined tray and cool 5 minutes, then cut into 12–16 bite squares.
